Confession – I am recycling this recipe, but it is because it’s that good. Â And perhaps because I haven’t cooked a single meal in over a month (the downside to perpetual travel).
But it is delicious. Â And healthy. Â And makes a perfect meal for one – pressed inside a tortilla for a quesadilla, eaten with multigrain tortilla chips, or right out of the pan (as I often do).
It’s especially perfect for Sunday football game watching – just double the recipe, make a quick guacamole, and serve with cut veggies and chips before your favorite team kicks off.
