Millions of peaches, peaches for me…
Millions of peaches, peaches for free.
Now that the song is stuck in your head and you have a craving for peaches, allow me to share my favorite peach recipe.
Peaches (and all stone fruit) are one of my favorite things about summer, along with ice-cream trucks and runs in Central Park. And while I’m perfectly content to eat them whole, throwing them on the grill and pairing it with a spicy, sweet Greek yogurt is even better.
It’s an easy summer dessert – and breakfast. And it’s as easy to make on a hot grill as it is on a cast iron skillet.
Slice. Sprinkle. Grill. Enjoy.
INGREDIENTS
- 4 ripe peaches
- Ghee
- Raw sugar
- 1 cup Greek yogurt
- 2 tablespoons honey
- 1 teaspoon white pepper
DIRECTIONS
- Heat grill (or grill pan) to medium-high heat
- While pan heats, slice peaches in quarters. Brush the cut side with ghee and sprinkle with raw sugar.
- Grill the fruit cut-side down for 2-5 minutes, and turn the fruit 90 degrees
- While fruit is grilling, whisk the yogurt, honey, and pepper until light.
- Serve and enjoy!
