I’ve always been a massive marshmallow fan, but never thought about making my own.  My friend Sonia convinced me that it was incredibly easy, and she was right.  The homemade variety are light as air, springy, and perfectly sweet – and I don’t think I can ever go back to eating the grocery store variety ever again.  I used this recipe and highly recommend it.  Paired with hot cocoa or eaten alone, they are the perfect holiday treat.  Warning – it’s impossible to eat just one (a fact I am learning the hard way).
